Black Sesame Porridge | IDDSI Level 4 Care Food Recipe

Ingredients (2 servings)

  • 50g black sesame powder (commercial instant or freshly ground)
  • 20g glutinous rice flour
  • 30g sugar (brown sugar recommended)
  • 250ml full-fat milk
  • 250ml water

Method

  1. Mix glutinous rice flour with a small amount of cold water (approximately 50ml) until no lumps remain
  2. Pour milk and water into a pot, heat over medium until warm (do not boil)
  3. Add black sesame powder and stir until combined
  4. Add sugar and stir until dissolved
  5. Slowly pour in glutinous rice flour mixture while continuously stirring
  6. Continue cooking over medium-low heat, stirring constantly, until porridge is smooth and thick (approximately 10 minutes)
  7. Remove from heat, allow to cool slightly before serving

Texture Test

Syringe flow test: Passes Level 4 — less than 8ml flows from 10ml in 10 seconds (slow flow rate)

Spoon test: Porridge holds shape on a spoon and slides off slowly when tilted

Consistency adjustment: If too thin, add 5g more glutinous rice flour mixture; if too thick, add a little hot water

Nutrition

Approximately 280 kcal per serving, rich in calcium (from sesame and milk). Black sesame is high in iron and Vitamin E.

For lactose intolerance: substitute unsweetened soy milk for cow’s milk.
