Ginger Tea Jelly | IDDSI Level 3-4 Thickened Drink Recipe

IDDSI Level 3-4 | 5 minutes active (+ 2 hours refrigeration) | Easy

Ingredients (1 serving)

  • 1 sachet instant ginger tea
  • 200ml hot water
  • 4g gelatin powder (for Level 3) / 6g gelatin powder (for Level 4 firmness)
  • 2 teaspoons brown sugar (adjust to taste)

Method

  1. Brew ginger tea in hot water, dissolve brown sugar
  2. Allow tea to cool slightly (to approximately 60°C), then add gelatin powder and stir until completely dissolved
  3. Pour into moulds (a shallow dish or silicone mould works well)
  4. Allow to cool at room temperature, then refrigerate for at least 2 hours
  5. Before serving, cut into small pieces (approximately 1×1cm) and serve with a spoon

Texture Description

  • Level 3 (less gelatin): Soft, easily mashed with a spoon, similar in texture to silken tofu
  • Level 4 jelly (more gelatin): More defined shape, but a fork can still easily break it apart

Advantages

Jellied beverages are safer than liquids (less likely to aspirate into the airway). This preserves the ginger tea experience — familiar flavour and comfort. Can be applied to other beverages: chrysanthemum tea, pu-erh tea, orange juice, apple juice.

Important Note

⚠️ Level must be confirmed by a speech therapist. Some patients require Level 4 and not Level 3. Individual assessment is required before use.
